This salad recipe is a great summer recipe with a host of flavors mixing together for an excellent lunch or dinner. Add in how easy it is to pull together makes this a wonderfully light and filling dinner for those hot summer evenings when it's just too warm to turn on the stove. The awesomeness is added to by the homemade, delicious, (and much better for you than a store bought bottle!) Raspberry Vinaigrette.
Pasta with Sausage and Peppers
Cold winters nights mean I keep making comfort food! This recipe is a solid balance between comfort, decently healthy, and super easy! Perfect for quick dinner during the week or to entertain a group over the weekend. Enjoy!
One Pot Curried Lentils
It's a gloomy day here so time for a spiced up easy lunch! These lentils are delicious and great for a crummy weather kind of day. Enjoy!
Pumpkin Bacon Pasta
Fall is here! So pumpkin is here of course! This delicious pasta recipe is also a healthier than most creamy comfort recipes thanks to the inclusion of pumpkin, milk, and chicken broth. What pumpkin recipes are your favorite?
Chicken Shrimp Skewers
So after the holidays (also known as the season of indulgence!) Chicago winter goes on and on...and on and on...and the temptation for comfort food is around every corner. I love this recipe for baked chicken shrimp kebabs with colorful vegetables to get me through the Chicago freezes.
Chicken Taco Salad
All the deliciousness of tacos but with a somewhat healthier spin - the taco salad! This salad uses my slow cooker taco chicken (found here Slow Cooker Taco Chicken) on a bed of crunchy veggies. It comes together easily as a group dinner or meal prep for the week. And in addition to its deliciousness and healthy perks - it's wonderfully colorful! It was great for trudging through the dreary winter days here. Enjoy!
Slow Cooker Taco Chicken
Ah tacos. So wonderful. So delicious. So not good for the budget if you're always ordering them as take out! (Guilty as charged) So how do we save some dollars? We make our own tacos! And it all starts with the meat. This is an easy recipe for taco style chicken inspired by a coworker but with a few of my own kicks. If you don't have time to make my Mexican spice blend you can use a packet of taco seasoning. Toss it in the slow cooker and let it come together on its own!
Mango Salsa Chicken
I know I've said it before but I'm going to say it again - chicken should never, ever, EVER be boring! A healthy dinner does not equate to a boring dinner. My mango salsa chicken is inspired by the Del Monte recipe for mango salsa - with a few tweaks to give it more of a punch. This dish pulls together delicious and beautiful fruits and veggies for a colorful and fabulous meal. Make it and freeze it for later or have everyone round for dinner! Enjoy!
Baked Tuna Pasta
So you want a baked pasta recipe that won't ruin your week but still has a flavor profile? Or it's a Friday in Lent and you're looking for something a little better than fried fish and chips (as delicious as that is!)? Or maybe you just need an easy casserole that you can pop in the oven while getting ready for company to come over? Bring in the tuna casserole! The tuna gives you a protein boost with just enough mayo to make it a comfort dish. Toss in some veggies and garlic and you're ready for dinner.
Autumn Veggie Quinoa Bowl
Fall is here! And with it wonderful vegetables that are delicious when roasted. I love this recipe because you've got beautiful colors, loads of healthy vegetables, and an excellent protein kick from the quinoa and black beans. A great healthy fall meal to get you through a busy week. Enjoy!
