This chicken recipe is light and easy and is perfect over a hearty Greek salad. Make sure you let the chicken marinate before putting it on the grill to really allow the flavors to blend. Enjoy!
Ingredients (makes 4 servings):
- 1 pound chicken thighs
- 1/4 cup olive oil
- Juice of 1 lemon
- 1 tbsp garlic powder
- 1 tsp paprika
- 1 tsp rosemary
- 1 tbsp basil
- 1 tbsp thyme
- 1 tbsp oregano
- 1 tsp salt
Recipe:
- In a small bowl, mix together olive oil, lemon juice, and spices. Add to a large bowl or large ziploc bag with chicken thighs and mix thoroughly to coat. Refrigerate for at least 1 hour.
- Remove chicken from marinade and shake off excess for a crisper result. Add chicken thighs to grill or grill pan. Cook on high heat for 7 minutes. Flip and cook for another 5 minutes. Remove from grill and shred.
- Serve over a large Greek salad or with a side such as Veggie Couscous. Enjoy!
