Fall is here! So pumpkin is here of course! This delicious pasta recipe is also a healthier than most creamy comfort recipes thanks to the inclusion of pumpkin, milk, and chicken broth. What pumpkin recipes are your favorite?
Ingredients (makes 8 servings):
- 1 pound of fettuccine
- olive oil
- 2 shallots
- 4 cloves minced garlic
- 12 ounces bacon
- 1 pound fresh brussels sprouts
- 1 cup chicken broth
- 1 cup canned pumpkin
- 1/2 cup skim milk
- 1/2 cup heavy whipping cream
- 1 cup parmesan cheese
- 1 tablespoon basil
- 1 tablespoon oregano
- Salt and pepper to taste
Recipe:
- Preheat oven to 400 degrees Fahrenheit. Remove the root of the brussels and then quarter them. Toss with about 6 tablespoons of olive oil. Spray a baking sheet with olive oil spray and bake for 20 minutes.
- Prepare fettuccine according to package instructions.
- Cut bacon into 1 inch pieces and cook in a separate pan. Set aside when done.
- Chop shallots. In a large skillet, heat olive oil and add garlic and shallots. Cook over medium-high heat until fragrant.
- Stir in chicken broth, pumpkin, milk, and cream. Bring to a boil then reduce heat to simmer. Add basil and oregano and simmer while stirring for about 5 minutes. Add parmesan cheese and increase heat to medium-high. Mix thoroughly until sauce thickens.


- Stir in bacon and sprouts.
- Mix in with prepared pasta. Serve and enjoy!
