This chicken recipe is incredibly easy and pairs well with many side dishes. The paprika brings a lovely spicy smoky flavor and giving the chicken time to marinate allows the flavors to blend. Grill and enjoy!
Ingredients (makes 4 servings):
- 1 pound chicken thighs
- juice of 1 lemon
- 1/2 cup olive oil
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp oregano
- 1 tsp cayenne
- 1 tsp parsley
- salt and pepper to taste
Recipe:
- In a small bowl, mix together olive oil, lemon juice, and spices. Place chicken thighs in a large Ziploc bag and pour in marinade. Mix in with chicken and marinate in fridge for at least 1 hour (ideally 3 hours!).
- Add chicken thighs to grill or grill pan. Cook for 7 minutes. Flip and cook for additional 5 minutes.
- Serve as whole thighs or shred before serving with a side such as Veggie Couscous. Enjoy!
