Paprika Grilled Chicken

This chicken recipe is incredibly easy and pairs well with many side dishes. The paprika brings a lovely spicy smoky flavor and giving the chicken time to marinate allows the flavors to blend. Grill and enjoy!

Ingredients (makes 4 servings):

  • 1 pound chicken thighs
  • juice of 1 lemon
  • 1/2 cup olive oil
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp oregano
  • 1 tsp cayenne
  • 1 tsp parsley
  • salt and pepper to taste

Recipe:

  • In a small bowl, mix together olive oil, lemon juice, and spices. Place chicken thighs in a large Ziploc bag and pour in marinade. Mix in with chicken and marinate in fridge for at least 1 hour (ideally 3 hours!).
  • Add chicken thighs to grill or grill pan. Cook for 7 minutes. Flip and cook for additional 5 minutes.
  • Serve as whole thighs or shred before serving with a side such as Veggie Couscous. Enjoy!
