Shrimp Red Curry Noodles

This recipe is SO easy and delicious. Anytime noodles are an option on a takeout menu I go for it. And now here’s a noodle recipe I can easily make at home. This recipe comes together quickly so make sure you prep all your ingredients before you begin.

Ingredients (makes 4 servings):

  • 1 pound raw shrimp, peeled and deveined
  • 2 packets of ramen noodles (you won’t need the flavor packets)
  • 2 bunches of scallions
  • 1 tbsp minced garlic
  • 1 zucchini
  • 8 ounces baby bella mushrooms
  • 1 green bell pepper
  • 1 bok choy
  • 4 ounce jar red curry paste
  • 1/4 cup soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp sesame oil
  • Salt and pepper to taste
  • 2 tsp ground ginger
  • Basil leaves
  • For additional heat: crushed red pepper and sriracha sauce

Recipe:

  • In a large bowl season the raw, peeled shrimp with the salt and ginger. Set aside.
  • In another bowl mix together the curry paste, soy sauce, and fish sauce. Set aside.
  • Cook the noodles per instructions and set aside. (Yes I know – a lot of setting aside here!)
  • Slice and quarter the zucchini. Chop the mushrooms. Dice the green bell pepper. Slice 1 bunch of green onions. Cut up the bok choy separating the leafy greens from the whites.
  • In a wok or large skillet heat the sesame oil on medium-high heat. Add the minced garlic and chopped scallions. Cook until softened – about 3 minutes. Add all the vegetables except the leafy greens of the bok choy. Stir thoroughly to coat in oil and cook on medium-high heat for 7 minutes until softened.
  • Mix the sauce into the vegetables. Add the shrimp and cook while stirring until done, about 5 minutes. Stir in noodles and leafy green bok choy leaves until the leaves are wilted and everything is thoroughly coated in the sauce.
  • Serve garnished with chopped scallions and torn basil leaves. If you desire more heat add sriracha and/or red pepper flakes. Enjoy
