Who doesn’t love caprese? Easy, delicious, and throw in a rotisserie chicken and you have a great side dish or a lovely lunch! This recipe is beautifully simple and comes together in a matter of minutes. Try it out for your next lunch meal prep or picnic!
Ingredients (makes 8 side servings or 4 meal servings):
- 1 rotisserie chicken shredded
- 1 bunch of basil
- 1 pint of cherry tomatoes
- 8 ounces of mozzarella pearls
- 8 teaspoons olive oil
- 8 teaspoons balsamic vinegar
Recipe:
- Chop the cherry tomatoes in half. Add to a large bowl with chicken, mozzarella, and shredded basil. Mix thoroughly.

- Add dressing and serve or store in the fridge and add dressing right before serving. Enjoy!
