As winter (and all the heavy comfort food that comes with it!) gets closer I like to have some easy healthy lunch recipes on standby. Check out this easy tuna farro salad recipe featuring LOADS of veggies and flavor.
Ingredients (makes 4 servings):

- 1 cup dry farro
- 1 cucumber
- 1 yellow bell pepper
- 1/2 red onion
- 1 jar roasted red peppers
- 1 pint cherry tomatoes
- 12 oz can tuna
- 4 oz feta
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 lemon
- Salt and pepper to taste
Directions:
- Cook farro according to package instructions.
- Meanwhile, finely chop the cucumber, bell pepper, red onion, and roasted red peppers. Cut the cherry tomatoes in half.
- In a large bowl mix the cucumber, bell pepper, red onion, roasted red peppers, and tomatoes. Mix thoroughly.






- Mix in tuna, feta cheese, and farro.



- Mix in olive oil, red wine vinegar, and juice of one lemon. Mix thoroughly, serve, and enjoy!
