Between warmer temps and increased vaccines summer cookouts are back! And so is the need for easy sides. So coleslaw is...fine. But it's often bland and never really good for you either. But we need sides for game days and potlucks and picnics and cookouts. So here we go with a new side and some light stats! Covid quarantine led to some bizarre side effects - one of which was rice being completely out of stock for several weeks at our local grocery store! I started cooking up different grains trying to put a dish together and created this simple but very taste side dish. Enjoy!

Growing up I was lucky enough to move around the world and experience food from a multitude of cultures. But throughout all of these travels my mum always made us recipes from our Scottish home. One of these was her potato salad recipe! It's less creamy than American potato salad, can be served warm or chilled, and is a little bit healthier too. I got this idea from the Del Monte mango salsa recipe. It was a good base but it was definitely missing the kick I like to get from my salsas! Very easy to make and a healthy, colorful snack.
