I got this idea from the Del Monte mango salsa recipe. It was a good base but it was definitely missing the kick I like to get from my salsas! Very easy to make and a healthy, colorful snack. Not to mention the praise you'll get if you bring this to a party! Awesome way to stand out from the usual chips and salsa crowd. Enjoy!
Mozzarella-Stuffed Meatballs with Sauce
Sometimes you need some good old judgement-free comfort food to get through the winter day. Or a gloomy day. Or a Tuesday. These meatballs are so much fun to make but you have to be willing to get your hands messy! Beef and sausage are combined for the meat and fresh mozzarella is rolled into the center for gooey cheesy goodness. Cook these up and store them in the freezer or gather round your friends for a dinner party!
Blueberry Vinaigrette

Salads and dressing go together - no arguments here! But I struggle with some of the dressing I see on the shelf at the store. We often see extremely high sodium, sugar, and (of course!) calories. It takes more effort to make your own dressing, but it pays dividends and gives you much more freedom to customize your dressing to better match your personal flavor profile along with the flavor profile of whatever salad you're serving.
