Growing up I was lucky enough to move around the world and experience food from a multitude of cultures. But throughout all of these travels my mum always made us recipes from our Scottish home. One of these was her potato salad recipe! It's less creamy than American potato salad, can be served warm or chilled, and is a little bit healthier too. Chicken Taco Salad

All the deliciousness of tacos but with a somewhat healthier spin - the taco salad! This salad uses my slow cooker taco chicken (found here Slow Cooker Taco Chicken) on a bed of crunchy veggies. It comes together easily as a group dinner or meal prep for the week. And in addition to its deliciousness and healthy perks - it's wonderfully colorful! Bacon Veggie Egg Bake

This past weekend I realized I was going to be out of town for the next four weekends. So time to get some meal prep done! After making my Naked Chicken Enchiladas and Chili  (both very freezer friendly!) I needed a breakfast option that I could make ahead but would last well in the freezer. And here it is! A good source of protein and colorful veggies with some spices to give it some excitement. Cut it into serving sizes and freeze for an easy breakfast during your morning rush.

Tex-Mex Quinoa Salad

So here in Minnesota it's still winter...and cold..and gloomy..So as a cure here is a colorful and delicious salad! The lemon zest adds a sunny flavor and the colorful vegetables make for a more interesting lunch plate. Not to mention the added benefit of some serious protein power in this dish. Enjoy!

Oreo Cheesecake Bars

My coworker had the excellent idea of having a potluck at work this month to get us out of our midwest winter blues. Everyone brought in delicious dishes from home and having it on a Wednesday was a great way to break up the humdrum of the week. I brought in my mango salsa (found here Mango Salsa) and Oreo cheesecake bars! They were a huge hit and now it's time to share them with you! Enjoy but beware - these are dangerously delicious!

Slow Cooker Taco Chicken

Ah tacos. So wonderful. So delicious. So not good for the budget if you're always ordering them as take out! (Guilty as charged) So how do we save some dollars? We make our own tacos! And it all starts with the meat. This is an easy recipe for taco style chicken inspired by a coworker but with a few of my own kicks. If you don't have time to make my Mexican spice blend you can use a packet of taco seasoning. Toss it in the slow cooker and let it come together on its own!

A packet of taco seasoning can help in a pinch but making your own is cheaper and you can suit it to your own taste profile. I use this when making chicken for tacos, enchiladas, and other dishes. Delicious, easy, and customizable! How do you like to balance your spice blend?

Mango Salsa

I got this idea from the Del Monte mango salsa recipe. It was a good base but it was definitely missing the kick I like to get from my salsas! Very easy to make and a healthy, colorful snack. Not to mention the praise you'll get if you bring this to a party! Awesome way to stand out from the usual chips and salsa crowd. Enjoy!
