Summer is here! Which means that once again it is just too hot to turn on a stove or an oven or anything else that generates heat. Enter this great salad recipe! Chicken Taco Salad

All the deliciousness of tacos but with a somewhat healthier spin - the taco salad! This salad uses my slow cooker taco chicken (found here Slow Cooker Taco Chicken) on a bed of crunchy veggies. It comes together easily as a group dinner or meal prep for the week. And in addition to its deliciousness and healthy perks - it's wonderfully colorful! Tex-Mex Quinoa Salad

So here in Minnesota it's still winter...and cold..and gloomy..So as a cure here is a colorful and delicious salad! The lemon zest adds a sunny flavor and the colorful vegetables make for a more interesting lunch plate. Not to mention the added benefit of some serious protein power in this dish. Enjoy!

Berry Walnut Salad

Time for another goodness filled salad to fit your budget!  Recently I was out with my cousins picking blueberries...and we went a little overboard! So after freezing a pound, (and snacking on a pound on the plane ride back to the twin cities!), I wanted to experiment with a blueberry vinaigrette  - which means I needed a salad to go with it!

Thanks to a lovely trip blueberry picking with my cousins, I have more blueberries than I know what to do with! So I decided to give a blueberry vinaigrette a whirl and (if I do say so myself) - it turned out delicious! Enjoy and let me know what you like to put in your homemade dressings!

Raspberry Vinaigrette

Salads and dressing go together - no arguments here! But I struggle with some of the dressing I see on the shelf at the store.  We often see extremely high sodium, sugar, and (of course!) calories. It takes more effort to make your own dressing, but it pays dividends and gives you much more freedom to customize your dressing to better match your personal flavor profile along with the flavor profile of whatever salad you're serving.

Three Bean Cucumber Salad

It's that time of year! Grad parties and picnics and summer cook-outs galore! These all come with the same question - what should I bring??? There are always the staples to fall back on in a pinch - pasta salad, coleslaw, a fruit platter, etc. And these are all undoubtedly great things to have at any summer festivity. But I recently went to a friend's cook-out. Now, I always end up bringing a variation of pasta salad but I heard someone else was already bringing one! That, combined with a wish to bring something a little different, led to try to create something a little more original. Enter the bean salad!
