Pineapple Pork Stir Fry

So what do you do when you have an extra can of pineapple and an afternoon of free time? Throw it in a skillet with some other fresh ingredients and see what comes out! That's where this stir fry recipe comes from. Lots of prep needed in the chopping department but all prepared in one large skillet for easy cooking and clean up! Naked Chicken Enchiladas

Enchiladas. We all love them. At least I do. And while making them once in a while is fun, the 2 hours spent prepping, chopping, cooking, mixing, wrapping, and baking is not always feasible. And the heavy overload of carbs and cheese is not always feasible either! Since the inside of the enchilada is where all the goodness is happening, this recipe just focuses on that - saving time and calories but never sacrificing flavor (courtesy of my Mexican Spice Blend - link included below). Berry Walnut Salad

Time for another goodness filled salad to fit your budget!  Recently I was out with my cousins picking blueberries...and we went a little overboard! So after freezing a pound, (and snacking on a pound on the plane ride back to the twin cities!), I wanted to experiment with a blueberry vinaigrette  - which means I needed a salad to go with it!

Thanks to a lovely trip blueberry picking with my cousins, I have more blueberries than I know what to do with! So I decided to give a blueberry vinaigrette a whirl and (if I do say so myself) - it turned out delicious! Enjoy and let me know what you like to put in your homemade dressings!

Raspberry Vinaigrette

Salads and dressing go together - no arguments here! But I struggle with some of the dressing I see on the shelf at the store.  We often see extremely high sodium, sugar, and (of course!) calories. It takes more effort to make your own dressing, but it pays dividends and gives you much more freedom to customize your dressing to better match your personal flavor profile along with the flavor profile of whatever salad you're serving.
