This superbly easy pasta sauce recipe is a great way to whip up a cheap and easy dinner loaded with protein without skimping on the comfort. You can make large batches at a time for a crowd and it freezes well so a great option for meal prep!
Ingredients (makes 6 to 8 servings):
- 2 tbsp olive oil
- 1 yellow onion diced
- 4 cloves minced garlic
- 8 ounces white mushrooms sliced
- 1 pound ground beef
- 28 ounces petite diced tomatoes
- 15 ounces tomato sauce
- 6 ounces tomato paste
- 2 tsp oregano
- 1 tbsp basil
- 1 tbsp Italian seasoning
- Salt and black pepper to taste
Recipe:
- Heat olive oil over medium-high heat in a large pot. Add onion and garlic and cook until softened, about 3 minutes. Add sliced mushrooms and cook until softened, about 5 minutes.
- Add beef and cook until browned throughout.
- Add diced tomatoes, sauce, and paste and bring to a boil.
- Reduce heat to a simmer and add all seasonings. Simmer while stirring occasionally over low heat for at least 20 minutes (ideally up to an hour for an even deeper flavor). While simmering sample and adjust salt and pepper to your taste.
- Serve with your favorite pasta topped with parmesan cheese (or save in the freezer as a meal prep option!). Enjoy!
