Roasted Brussels Sprouts

Brussels sprouts have a bad reputation but when made properly they are delicious! My favorite method is roasting with olive oil, anchovies, salt and pepper, and a big glug of olive oil. These are great as a side to any wintry meat dish. Enjoy!

Ingredients:

  • 2 pounds of fresh brussels sprouts
  • 6 tablespoons olive oil
  • 2 oz can of anchovy filets
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes

Recipe:

  • Preheat the oven to 400 degrees Fahrenheit.
  • Remove the root of your brussels sprouts and then cut them into quarters.
  • Place them in a large bowl. Chop your anchovies into small pieces and add them to the bowl. Toss in the red pepper flakes. Then mix thoroughly with olive oil and add salt and pepper to taste.
  • Spray a baking sheet with olive oil spray and spread the brussels sprouts in a single layer. Bake for 25 minutes or until crisp – tossing halfway through. Enjoy!
