Looking for an easy healthy breakfast that you can make for 1 or everyone? Look no further! This recipe is an easy low carb breakfast for one or for the whole family! And since you only use one baking sheet there’s easy clean up too. Enjoy!
Ingredients (makes 1 serving):

- 1 green bell pepper
- 2 eggs
- 1 roma tomato
- 28 g of sharp cheddar
- Salt and pepper to taste
Recipe:
- Pre-heat the oven to 400 degrees Farneheit.
- Cut the pepper in half and carefully (!) cut out the membrane and seeds. Season with salt and pepper. Place on a baking sheet lined with parchment paper and bake for 10 minutes.

- Remove the peppers from the oven and add in the chopped tomato. Crack the egg over the tomato. Season with salt and pepper. Bake for 17 minutes.
- Remove from oven and top with cheddar cheese. Bake for 3 additional minutes. Remove from oven.
- Serve and enjoy!
