Shrimp and Steak Fajitas

Fajitas are a great fast dinner recipe. And making them yourself is way cheaper than takeout! Steak and shrimp is my favorite combination but you can also sub in thinly sliced chicken or ditch the meat and go vegetarian. Enjoy with a side of my Guacamole!

Ingredients (makes 4 servings):

  • Half pound of flank steak or skirt steak thinly sliced
  • Half pound of raw shrimp, tails removed
  • 1 tbsp Mexican Spice Blend
  • 3 multi color bell peppers
  • 1 white onion
  • Tortillas
  • Suggested garnishes: Guacamole, cilantro, salsa, lime wedges
  • Suggested sides: rice, beans, tortilla chips

Recipe:

  • Thinly slice the bell peppers and onion. Place on your grill, griddle, or skillet sprayed with a non-stick spray over medium-high heat. Cook for 10 minutes. Shuffle around and flip throughout.
  • Meanwhile season the steak and shrimp with the Mexican Spice Blend. Add to the hot grill (keep the peppers and onion on – they need to keep cooking!). Cook for about 3 minutes (while still turning the peppers) then turn the steak and shrimp and cook for another 2 minutes.
  • Serve in tortillas with your favorite sides and garnishes!
