So while most of my recipes are affordable, quick, and easy, it is possible to have a recipe that is affordable, takes a very long time…and is still easy!
This recipe cooks slowly for nine hours, simmering together seasoned pork, barbecue sauce, and pineapple. Toss in a few other spices and you have an easy recipe that yields a huge amount of food and is guaranteed to be a crowd pleaser! So set your slow cooker and watch this meal come together. Added bonus: your kitchen will smell amazing!
Ingredients (makes 12-16 sandwiches):

- 3.5 to 4 pounds of pork butt roast or pork shoulder
- Garlic powder
- Salt
- Pepper
- 1 red onion
- 3 cloves garlic
- 18 ounces of your preferred barbecue sauce
- Pineapple
- 4 tbsp honey
- 1 tbsp ginger
Recipe:
- Trim excess fat from pork – as much as you can. You can get the more challenging bits off after the meat cooks. Season pork on all sides with garlic powder, salt, and black pepper. Place the seasoned pork in the crock pot in 2 cups of water. Cook on low heat for 8 hours.
- Dice onion and garlic and mix with ginger.



- Combine the mixture with the barbecue sauce, pineapple, and honey. Cover and store in the fridge until ready to use.

- After the pork has cooked for eight hours, remove the meat from the slow cooker and set aside. Drain out the excess liquid from the slow cooker. Shred the pork (removing any excess fat) and return to the slow cooker. Add the pineapple-barbecue sauce. Mix thoroughly and cook on low for one hour.


- After an hour (by this point your kitchen will smell fabulous!) your pineapple-barbecue pork is ready to serve! Enjoy a pulled pork sandwich or enjoy the meat by itself for a low-carb option.
