Shrimp Asparagus Pasta

Easy and healthy come together in this quick pasta recipe! Use the same pot for the asparagus, pasta, and shrimp and then mix it up with a batch of Marinara Sauce for an easy lunch or dinner recipe. Make the marinara sauce ahead of time and refrigerate or freeze to cut out even more time. Enjoy!

Ingredients (makes 6 to 8 servings):

  • One box pasta (bow tie is my personal preference for this recipe!)
  • 1 bunch asparagus
  • 1 tbsp olive oil
  • 1 pound raw shrimp, peeled and deveined
  • 1 batch of Marinara Sauce prepared
  • Parmesan cheese (optional for topping)

Recipe:

  • Bring a large pot of salted (very salted!) water to boil. Remove the ends of the asparagus and chop into pieces roughly one inch long. Add to the boiling water and cook for about 4 minutes. Remove with a slotted spoon and add to a large bowl.
  • Bring the water back to a boil and add the pasta. Cook until al dente. (This would be a great time to warm up the prepared marinara sauce.) Remove with a slotted spoon and add to the bowl.
  • Empty the pot. Add about a tablespoon of olive oil. Add the peeled and deveined shrimp and cook until fully pink – about 2 to 3 minutes on each side.
  • Add shrimp to the large bowl and mix in the warmed marinara sauce. Divide among bowls and serve with parmesan cheese if desired. Enjoy!
