Summertime and the living’s berry filled!
This salad recipe is a great summer recipe with a host of flavors mixing together for an excellent lunch or dinner. Add in how easy it is to pull together makes this a wonderfully light and filling dinner for those hot summer evenings when it’s just too warm to turn on the stove. The awesomeness is added to by the homemade, delicious, (and much better for you than a store bought bottle!) Raspberry Vinaigrette.
Ingredients (makes 4 hearty servings):

- 2 bunches of spinach, ends trimmed
- 1 rotisserie chicken, shredded
- 2 avocados
- 16 oz. strawberries, diced
- 1 pint blueberries
- 2 cucumbers
- 4 oz. goat cheese
- 1 batch of Raspberry Vinaigrette
Recipe:
- Chop the spinach, strawberries, and cucumbers. Toss the chopped spinach into a large bowl, followed by the chicken, strawberries, blueberries, and cucumber. Mix thoroughly.
- To serve top with half a sliced avocado, 1 ounce of goat cheese, and Raspberry Vinaigrette. Enjoy!
