Easy Broiled Sheet Pan Vegetables

This is an easy (and colorful!) healthy side dish. The flavor profile is simple and delicious so it pairs well with anything. Enjoy!

Ingredients (makes 6 to 8 side servings):

  • 18 ounces cherry tomatoes, halved
  • 1 orange bell pepper, diced
  • 1 yellow squash, cut into half moons
  • 2 small zucchini, cut into half moons
  • 1 eggplant, cut into half moons
  • 1 red onion, diced
  • 8 ounces white mushrooms, sliced
  • 3 tablespoon olive oil
  • 2 teaspoon garlic powder
  • Salt and pepper

Recipe:

  • Move a rack in your oven close to your broiler. Line a large baking sheet with tin foil.
  • Lay out the vegetables on the baking sheet: tomatoes, bell pepper, squash, zucchini, eggplant, onion, and mushrooms.
  • Drizzle with olive oil, garlic powder, salt and pepper. Broil for 15 – 20 minutes until softened and slightly charred to your liking.
  • Enjoy as an easy side. We paired it with baked potatoes that were topped with my Zesty Tuna Salad for a great summer dinner.
