Pepperoni Poppers and Pesto Poppers

I have been making these poppers for years to serve at parties and they’ve always been a hit (read as no leftovers!). Finally took the time to write down and measure out the recipe. Usually for parties I’ll prep the day before and put them in the fridge then take them out to bake when it’s serving time. Simple, tasty, and a popular snack item for parties or game days. Enjoy!

Ingredients (makes 32 poppers):

  • 2 cans of biscuit dough
  • 32 slices of pepperoni
  • 64 mozzarella pearls
  • About half a batch of Marinara Sauce (for cooking and dipping!)
  • 16 teaspoons pesto

Recipe:

  • Preheat oven to 375 degrees.
  • Open the biscuit dough. Cut each biscuit in half and roll out each half to flat circle. (Not too thin – if you can see through the dough against a light it’s too thin and will leak.)
  • For half the biscuits, drop on teaspoon of marinara, top with two slices of pepperoni, and two mozzarella pearls. Pinch the edges together at the top and lightly roll. Place on a baking sheet lined with parchment paper with the fold down.
  • For the other half of the rolled biscuits, drop one teaspoon pesto sauce and top with two mozzarella pearls. Pinch the edges together at the top and lightly roll. Place on a baking sheet lined with parchment paper with the fold down.
  • Working in batches if needed (depending on oven size and baking sheet size!) bake the poppers for 15 minutes until lightly crispy on top. (As you can see perfection is not the goal – a couple of mine burst in this batch but they are still delicious!)
  • Serve with marinara sauce for dipping. Enjoy!
