Bean-Slaw

So coleslaw is…fine. But it’s often bland and never really good for you either. But we need sides for game days and potlucks and picnics and cookouts. So here we go with a new side and some light stats! This coleslaw-based salad is high in protein, high in crunch, high in color, and most importantly high in flavor!

Ingredients (makes about 8 side servings):

  • 1 bag of broccoli slaw
  • 1 bell pepper, diced
  • 1 can of sweet corn, drained
  • 1 can of blackeye peas, drained
  • 1 red onion, diced
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1 tbsp dijon mustard
  • 2 tsp white wine vinegar
  • Salt and pepper to taste

Directions:

  • In a large (large!) mixing bowl empty the broccoli slaw bag and add in the chopped pepper, corn, blackeye peas, and red onion.
  • Mix thoroughly. In a small bowl mix together the olive oil, lemon juice, dijon mustard, and white wine vinegar. Mix the dressing into the salad. Add salt and pepper to taste. Enjoy!
