Hoping for a family get together this year got me thinking about easy breakfast recipes for a crowd. Of course an egg bake like my Bacon Veggie Egg Bake is a great crowd pleaser but what about a sweeter breakfast? Or a fabulous carb? Everyone loves pancakes but I’ve always found it tricky to make them for a crowd. They never come out at the same time and the first person finishes before the last person gets to start. Enter the giant baked pancake! Goodness of a pancake with the ease of a one tray bake. Throw in chocolate and banana and you’ve got an easy crowd pleaser. Enjoy!
Ingredients (makes 8 servings):

- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1.5 tsp salt
- 2 cups milk
- 2 tbsp melted butter
- 1 tbsp honey
- 2 eggs
- 2 bananas
- 4 tbsp milk chocolate chips
- 4 tbsp semi-sweet chocolate chips
Recipe:
- Preheat oven to 425 degrees.
- In a large bowl mix together the flour, baking powder, baking soda, and salt. In another bowl mix together the milk, melted butter, honey, and two eggs. Gently mix the wet ingredients into the dry ingredients until evenly combined.
- Slice the bananas and add them to the batter and mix. Add the chocolate chips and gently mix.
- Spray a baking sheet with non-stick spray. Lay down parchment paper. And spray the parchment paper with the spray as well. This keeps everything in place and really helps when it’s time to remove the pancakes! Carefully pour the batter into the prepared tray. Spread evenly.

- Bake for 12-15 minutes until done. Let cool for a couple minutes then flip out the pancake. (I prefer flipping it out onto a cooling rack.) Slice into 16 pieces and enjoy!
