I love pasta salad recipes. They’re a great meal prep option that you can make healthy and tasty with any flavor profile. This recipe takes some classic Greek salad flavors for a light easy lunch option you can make for the week. What are your favorite meal prep recipes?
Ingredients (makes 6 servings):

- One box of a fun pasta shape such as cellentani
- 1 lemon
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
- 1 bunch of kale
- 2 cucumbers
- 24 ounces grape or cherry tomatoes
- 1/2 red onion
- 4 ounces feta cheese
Recipe:
- Cook the pasta according to package instructions. While it’s cooking whisk together the lemon juice, olive oil, and vinegar. Add salt and pepper to taste and set aside.
- Roughly chop the kale. When the pasta is cooked place in a colander with the chopped kale and rinse under cold water to cool the pasta.
- Slice and quarter the cucumber, half the tomatoes, and dice the red onion. Place in a large mixing bowl. Add in the pasta and kale and mix in the prepared dressing. Mix in the feta.
- Serve and enjoy!
