We (finally!) got our first real snow of the season in Chicago last week! Which means warm comforting lunches are a must! This recipe is incredibly easy and tasty – perfect for lunch at home on a cold Saturday. One pot is all you need making for easy clean up too!
Ingredients (makes 4 servings):

- 1 tablespoon olive oil
- 1 onion
- 4 cloves minced garlic
- 1 serrano pepper
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon curry powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 1 teaspoon salt plus more to taste
- 2 cups dry red lentils
- 14 ounce lite coconut milk
- 8 ounces tomato sauce
- 6 ounces tomato paste
- 2 cups water
- 2 lemons
- 2 roma tomatoes for garnish
- Cilantro for garnish
Recipe:
- Heat olive oil in a large pot or dutch oven on medium high heat. Chop onion and serrano pepper and add with garlic to pot. Cook until soft and fragrant, about 4 minutes.

- Add all the spices and stir thoroughly for 30 seconds.
- Add lentils, coconut milk, tomato sauce, tomato paste, and water. Stir thoroughly and bring to a boil. Reduce to a simmer. Cover and cook for 30 minutes, stirring occasionally. Add salt to taste as needed.


- Serve with chopped tomatoes and cilantro and enjoy!
