Veggie Couscous

Covid quarantine led to some bizarre side effects – one of which was rice being completely out of stock for several weeks at our local grocery store! I started cooking up different grains trying to put a dish together and created this simple but very taste side dish. Enjoy!

Ingredients (makes 4 servings):

  • 8 ounces dry couscous
  • Olive oil
  • 3 cloves garlic
  • 1 zucchini cut into quarters
  • 1 yellow squash cut into quarters
  • 1 pint cherry tomatoes halved
  • 1 bunch spinach
  • Juice of one lemon
  • Salt and pepper to taste

Recipe:

  • Prepare couscous according to package instructions.
  • Meanwhile in a large skillet heat the olive and garlic over medium high heat until fragrant. Add the zucchini and squash and cook until tender, about five minutes.
  • Add the tomatoes and cook until blistering, about 3 minutes.
  • Add the spinach and stir until it wilts.
  • Mix in the couscous, lemon juice, and salt and pepper.
  • Serve and enjoy!
