Covid quarantine led to some bizarre side effects – one of which was rice being completely out of stock for several weeks at our local grocery store! I started cooking up different grains trying to put a dish together and created this simple but very taste side dish. Enjoy!
Ingredients (makes 4 servings):

- 8 ounces dry couscous
- Olive oil
- 3 cloves garlic
- 1 zucchini cut into quarters
- 1 yellow squash cut into quarters
- 1 pint cherry tomatoes halved
- 1 bunch spinach
- Juice of one lemon
- Salt and pepper to taste
Recipe:
- Prepare couscous according to package instructions.
- Meanwhile in a large skillet heat the olive and garlic over medium high heat until fragrant. Add the zucchini and squash and cook until tender, about five minutes.

- Add the tomatoes and cook until blistering, about 3 minutes.

- Add the spinach and stir until it wilts.

- Mix in the couscous, lemon juice, and salt and pepper.
- Serve and enjoy!
