To be clear – I LOVE a rotisserie chicken. They make everything so easy! I recently used one to make this quick chicken salad for a picnic. Quick, simple, and travels well. Enjoy on a crusty roll or lettuce leaves!
Ingredients (makes about 4 servings):

- 1 rotisserie chicken shredded
- 1 12 oz jar of roasted red peppers
- 1 3.5 oz jar of capers
- 1 lemon
- 1 tablespoon of olive oil
- 1 tablespoon of red wine vinegar
- Salt and pepper to taste
- Crusty rolls or lettuce leaves for serving
Recipe:
- Roughly chop the roasted red peppers. Juice lemon.
- Place all ingredients in a large bowl and mix thoroughly. Add salt and paper to taste.



- Serve on a crusty roll or lettuce leaves for lighter option. Enjoy!
