While a tuna melt from a classic diner is always the best option – a make at home option isn’t a bad alternative. Try this for breakfast or lunch as a quick meal using my Zesty Tuna Salad.
Ingredients (makes 4 servings):

- 4 English muffins
- 4 slices of sharp cheddar cut in half or 8 slices of extra thin sharp cheddar
- 1 tomato sliced
- 1 batch of Zesty Tuna Salad
Directions:
- Preheat oven to 400 degrees.
- If you haven’t already prepare the Zesty Tuna Salad

- Slice English muffins and bake on a foil-lined baking sheet for 2 minutes.
- Top evenly with tuna salad. Layer with cheese and sliced tomato.
Bake for 12 minutes or until cheese is melted.
