I love a classic diner tuna salad (melt or sandwich or by itself!) but stay at home restrictions have restricted restaurant access. This easy version gets its delicious kick from mustard and scallions. Enjoy it as is or on a delicious tuna melt!
Ingredients:

- 1 12 oz can of tuna (drained)
- Juice of 1 lemon
- 2 teaspoons dijon mustard
- 4 tablespoons light mayonnaise
- Salt and pepper to taste
- 1 bunch scallions (chopped)
Directions (makes 4 servings):
