Scottish Potato Salad

Growing up I was lucky enough to move around the world and experience food from a multitude of cultures. But throughout all of these travels my mum always made us recipes from our Scottish home. One of these was her potato salad recipe! It’s less creamy than American potato salad, can be served warm or chilled, and is a little bit healthier too. Try whipping up this easy side dish for your next party or potluck!

Ingredients (makes 4 to 6 side servings):

  • One pound of small potatoes (yellow or multi-colored)
  • One bunch of scallions
  • A dollop or two of mayonnaise to taste

Directions:

  • Wash potatoes and cut them in half. Add them to a pot of boiling water and boil for 12 minutes.
  • Drain the potatoes and add to a mix bowl.
  • Cut the scallions into half inch size pieces and add them to the bowl.
  • Add a dollop of mayonnaise and mix thoroughly. Continue adding to taste until satisfied.

Serve warm or chilled! Try it as a side to my Chicken Shrimp Skewers  (shown) Roasted Red Pepper Soup, or Avocado Chicken Cucumber Salad.
