Avocado Cucumber Chicken Salad

Summer is here! Which means that once again it is just too hot to turn on a stove or an oven or anything else that generates heat. Enter this great salad recipe! No cook, easy to make, and filling enough to be dinner recipe! It’s a great source of protein and wonderfully colorful to serve on a summer’s day. Enjoy!

Ingredients (makes 4 dinner servings or 8 side servings):

  • 2 avocados
  • 1 large cucumber
  • 2 Roma tomatoes
  • 1 red onion
  • 1 can of chick peas (drained)
  • 1 shredded rotisserie chicken
  • 1 lemon
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp basil
  • Salt and pepper to taste

Directions:

  • Chop avocados, cucumber, Roma tomatoes, and red onion. Mix in a large salad bowl. Add the drained chickpeas and the shredded chicken and mix thoroughly.
  • Add the zest and juice from the lemon, olive oil, red wine vinegar, and basil to the bowl and mix thoroughly.
  • Add salt and pepper to taste.

  • Serve as an entree or a side salad, perhaps with a slice of your favorite toasted baguette. We served it on slices of toasted French bread.
