Summer is here! Which means that once again it is just too hot to turn on a stove or an oven or anything else that generates heat. Enter this great salad recipe! No cook, easy to make, and filling enough to be dinner recipe! It’s a great source of protein and wonderfully colorful to serve on a summer’s day. Enjoy!
Ingredients (makes 4 dinner servings or 8 side servings):

- 2 avocados
- 1 large cucumber
- 2 Roma tomatoes
- 1 red onion
- 1 can of chick peas (drained)
- 1 shredded rotisserie chicken
- 1 lemon
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tbsp basil
- Salt and pepper to taste
Directions:
- Chop avocados, cucumber, Roma tomatoes, and red onion. Mix in a large salad bowl. Add the drained chickpeas and the shredded chicken and mix thoroughly.
- Add the zest and juice from the lemon, olive oil, red wine vinegar, and basil to the bowl and mix thoroughly.
- Add salt and pepper to taste.


- Serve as an entree or a side salad, perhaps with a slice of your favorite toasted baguette. We served it on slices of toasted French bread.
