Everyone needs a few easy desserts for a group setting – potlucks, game nights, parties, whatever you want! These Oreo cheesecake bars are delicious (duh) and extremely easy. Make them the ahead of time and be ready for your friends to ask for the recipe!
Ingredients:

- One box of 30 Oreos
- 4 tbsp butter
- 3 bricks of reduced fat cream cheese – softened (yes there is such a thing as cheesecake bars that are too heavy!)
- 1/2 tbsp vanilla extract
- 2/3 cup sugar
- 3 eggs
Directions:
- Heat oven to 300 degrees.
- Place 15 Oreos in a large Ziploc bag, break them up and place in a large mixing bowl.

- Microwave butter until melted and mix in with the Oreos.
- Press the mixture evenly and firmly into the bottom of a 9×9 baking dish.

- In a large bowl with a hand mixer or using a stand mixer, beat together the softened cream cheese, sugar, and vanilla until smooth.
- Add each egg and beat until smooth before adding the next one. Crumble another 8 hours and gently stir them into the batter.
- Pour your mixture over the Oreo crust. Break up your last 7 Oreos and sprinkle the pieces on top. Place in the oven and bake for 60 minutes, or until center has set.

- Refrigerate until completely cooled. Cut into bars, serve, and enjoy!
