I know I’ve said it before but I’m going to say it again – chicken should never, ever, EVER be boring! A healthy dinner does not equate to a boring dinner. My mango salsa chicken is inspired by the Del Monte recipe for mango salsa – with a few tweaks to give it more of a punch. This dish pulls together delicious and beautiful fruits and veggies for a colorful and fabulous meal. Make it and freeze it for later or have everyone round for dinner! Enjoy!
Ingredients (makes 6 servings):

- Olive oil
- 2 pounds of chicken
- One batch of my mango salsa
- For the salsa:
- 1/2 chopped red onion
- 1 can diced mangos, drained
- 1 can petite diced tomatoes, drained
- 1 chopped jalapeño
- 1 tsp. garlic powder
- Cilantro to taste
- 1 tsp. salt
- Juice from 1 lime
- 1/2 red onion
- 1 red pepper
- 1 orange pepper
- 1 yellow pepper
- 1/2 jalapeño
- 1 tbsp. garlic powder
- 1 tbsp. oregano
- 1 tsp. paprika
- 1 tsp. coriander
- Cilantro to taste
- Juice from 1/2 lime
- Serving suggestion: rice
Directions:
- Cook chicken in olive oil until no longer pink on the outside – about five minutes on each side.
- Meanwhile, make your mango salsa. Warning: This salsa is delicious and it’s easy to eat all of it with tortilla chips before adding it to your dinner!

- Dice red onion and peppers and chop jalapeño.

- Add to chicken. Add salsa and seasonings as well.
Bring to a boil. Reduce heat to medium-low. Cover and simmer for 20 minutes and then add juice from 1/2 lime.

Serve with rice or enjoy by itself for a lighter meal!
